</description><title>Over the Wire</title><generator>Tumblr (3.0; @leemcalilly)</generator><link>http://leemcalilly.com/</link><item><title>Mom's Breakfast Caserole</title><description>&lt;p&gt;The first time I cooked this was before you were born&amp;#8230;in Meridian. It was for a Christmas breakfast with the Maples. Every Christmas morning  Peg, Phil, and Emily and me, Lee, and Steve would eat breakfast together. I started that tradition at our house on 24th avenue. Then we went to the Maples&amp;#8217; house. You and Dylan and then Sam came and we just cooked more food. When we moved to Tupelo, I continued that tradition with the Crews family.&lt;/p&gt;
&lt;p&gt;Thought a little history might make it taste better!&lt;/p&gt;
&lt;p&gt;I love you,&lt;/p&gt;
&lt;p&gt;Mom&lt;/p&gt;
&lt;hr&gt;&lt;p&gt;&lt;strong&gt;Pam&amp;#8217;s Breakfast Casserole&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;6 slices white bread cubed&amp;#8212;-I usually use left over French bread cause that is what I normally have&lt;/p&gt;
&lt;p&gt;1 pound sausage, cooked, drained, and crumbled&amp;#8212;this is optional for me; for a time I would leave it out completely, but started adding again; if you want to try something new (chiles, Canadian bacon, etc), this is what I would substitute; I don&amp;#8217;t think I&amp;#8217;ve ever used a complete pound of sausage; and I always get the HOT and squeeze the grease out with paper towel&lt;/p&gt;
&lt;p&gt;1 cup shredded extra sharp cheese&amp;#8212;-this amount is my starting point; I grate cheese over the top until I think it has enough; I&amp;#8217;ve learned that too much makes the casserole &amp;#8220;heavy&amp;#8221; and it will &amp;#8220;fall&amp;#8221; too much after cooling&lt;/p&gt;
&lt;p&gt;Put these three ingredients in a greased casserole (11x7); sometimes I split it between two square dishes&lt;/p&gt;
&lt;p&gt;Pour over the above the following ingredients that have been beaten together:&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;6 eggs&lt;/li&gt;
&lt;li&gt;2 cups milk&lt;/li&gt;
&lt;li&gt;1 tsp salt&lt;/li&gt;
&lt;li&gt;1 tsp dry mustard&amp;#8212;this is only if I have it&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;Cover with plastic wrap and let set in the refrigerator overnight&amp;#8230;this is an important step. Eggs must have time to soak into the bread cubes. Bake for 1 hour or longer, until puffy and golden brown at 350. &lt;li&gt;&lt;span&gt;1/2 cup self rising flour&lt;/span&gt;&lt;/li&gt;
&lt;li&gt;&lt;span&gt;1 teaspoon baking powder&lt;/span&gt;&lt;/li&gt;
&lt;li&gt;&lt;span&gt;1 onion diced&lt;/span&gt;&lt;/li&gt;
&lt;li&gt;&lt;span&gt;1 egg&lt;/span&gt;&lt;/li&gt;
&lt;li&gt;&lt;span&gt;Pepper to suit your taste&lt;/span&gt;&lt;/li&gt;
&lt;li&gt;&lt;span&gt;Buttermilk to make the right consistency&lt;/span&gt;&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;&lt;span&gt;&lt;br/&gt;&lt;/span&gt;&lt;span&gt;Heat cooking oil (peanut is good, but canola ok too) to about 350,&lt;/span&gt;&lt;span&gt;&lt;br/&gt;&lt;/span&gt;&lt;span&gt;Using two spoons, dip the mix with one spoon and cut it into the oil with the other spoon.&lt;/span&gt;&lt;span&gt;&lt;br/&gt;&lt;/span&gt;&lt;span&gt;&lt;br/&gt;&lt;/span&gt;&lt;span&gt;Stir them so they&amp;#8217;ll turn over and cook both sides.&lt;/span&gt;&lt;span&gt;&lt;br/&gt;&lt;/span&gt;&lt;span&gt;&lt;br/&gt;&lt;/span&gt;&lt;span&gt;If the oil is too hot they will cook on the outside and be mushy on the inside. Grandddaddy doesn&amp;#8217;t like that.&lt;/span&gt;&lt;/p&gt;

Linguine Noodles cooked al dente&lt;/li&gt;
&lt;li&gt;8 oz. cooked bacon, crumbled&lt;/li&gt;
&lt;li&gt;1/4 cup slide fresh mushrooms&lt;/li&gt;
&lt;li&gt;4 tbsp. butter&lt;/li&gt;
&lt;li&gt;1 tsp. minced fresh garlic&lt;/li&gt;
&lt;li&gt;1 tsp. cracked red pepper&lt;/li&gt;
&lt;li&gt;1 medium egg&lt;/li&gt;
&lt;li&gt;8 oz. heavy whipping cream&lt;/li&gt;
&lt;li&gt;freshly grated Parmesan chees&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;Cook bacon in large skillet until crisp. Drain and crumble to equal one cup. Melt butter in large skillet. Add garlic, red pepper flakes, black pepper, bacon and mushrooms. Saute over medium heat approximately 2-3 minutes. Add cream and bring to a full boil. Add linguine noodles and return to a full boil for approximately 2 minutes. Remove from heat. Add 1 egg and stir quickly to prevent from scrambling. Place in hot pasta bowls and top with freshly ground Parmesan cheese.&lt;/p&gt;
&lt;p&gt;You can also add chicken or shrimp to the dish.&lt;/p&gt;

&lt;p&gt;Ingredients:&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;Watermelon Cubes&lt;/li&gt;
&lt;li&gt;Cherry tomatoes halved&lt;/li&gt;
&lt;li&gt;Cayenne&lt;/li&gt;
&lt;li&gt;Blue cheese (or Roquefort)&lt;/li&gt;
&lt;li&gt;Scallions&lt;/li&gt;
&lt;li&gt;Oil and Vinegar&lt;/li&gt;
&lt;li&gt;Parsley&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;Key to this is tasting as you go. Add ingredients and taste as you go until the flavor is balanced. Start with a couple tablespoons of olive oil. Start light with the vinegar. Mark prefers sherry vinegar, but you can use balsamic. Add the watermelon and tomatoes. At a big but not huge pinch of cayenne. Add the blue cheese. Add some of the scallions and parsley and then keep working with each ingredient until you get the acid, salty, and sweet combinations how you like it. &lt;p&gt;&lt;strong&gt;Ingredients:&lt;/strong&gt;&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;1/2 ciabatta, cut in 1/2&amp;#8221; cubes&lt;/li&gt;
&lt;li&gt;3 tomatoes, cut into 1&amp;#8221; pieces&lt;/li&gt;
&lt;li&gt;1/2 cup pitted Kalamata olives, cut into halves&lt;/li&gt;
&lt;li&gt;1/2 red onion, finely sliced&lt;/li&gt;
&lt;li&gt;4 Tbsp capers, drained&lt;/li&gt;
&lt;li&gt;4 Tbsp red wine vinegar&lt;/li&gt;
&lt;li&gt;1/3 cup olive oil&lt;/li&gt;
&lt;li&gt;1/2 cut fresh basil leaves, torn and placed on top for garnish&lt;/li&gt;
&lt;li&gt;1 cup cubed Boconcini fresh mozarella (optional)&lt;/li&gt;
&lt;li&gt;salt and pepper to taste&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;Preheat broiler. On a baking sheet, spread the Ciabatta cubes in a single layer. Place under a preheated broiler. toss often, until bread cubes are golden - approximately 4-5 minutes. Remove from oven and set aside. In a large bowl, toss together the toasted bread cubes, tomotoes, cucumber, olives, red onions and capers. In a small mixing bowl, whisk together the red wine vinegar and olive oild. Season with salt and pepper. Drizzle dressing over bread mixture and toss well. Add in fresh mozzarella. For optimum flavor allow salad to rest 30 minutes.
